While not for everyone, many of us due to age and injury end up committing our weight early on the front foot, causing us to lunge with the upper body or chase the ball too far ahead for an improper point of contact. A reach step, allows us to stay back longer on the rear leg and wait with an easier tempo. Certainly doesn't have to be as radical as the demonstration, but its a movement that many pros use.
